Matcha Lemon Posset Brûlée
Silky, citrusy, and just a little fancy — this Matcha Lemon Posset is the kind of dessert that looks impressive but takes only a handful of ingredients and minimal effort. Served in hollowed lemon halves and finished with a crisp brûléed sugar top, it’s a show-stopping sweet with a surprising matcha twist.
🍋 Ingredients (makes 6 small servings)
- 3–4 lemons (thick-skinned ones work best)
- 200 ml heavy cream (33% fat or higher)
- 50 g sugar
- 4 tbsp fresh lemon juice
- Zest of 1 lemon
- A dash of vanilla extract
- 1 tsp premium matcha powder @matchaunion

1️⃣ Prep the lemon cups
Cut the lemons in half, scoop out the insides carefully, and set the pulp aside. Extract 4 tbsp of lemon juice from the pulp and keep the hollowed peels as your serving cups.
2️⃣ Infuse the sugar
In a saucepan, add the sugar and lemon zest, then gently mash together with a spoon to release the natural citrus oils.
3️⃣ Simmer the cream
Pour in the heavy cream and warm it gently over medium heat, stirring occasionally for 6–7 minutes. Be careful not to let it boil.
4️⃣ Flavor the posset
Remove from heat and stir in the lemon juice, a dash of vanilla, and matcha powder. Mix until fully combined.
5️⃣ Strain & pour
Strain the mixture through a fine mesh sieve to remove zest and pulp. Then pour the smooth, green-tinged cream into the lemon halves.
6️⃣ Chill to set
Place the filled lemons in a dish or tray and chill for at least 3 hours (or overnight) until set to a custard-like consistency.
7️⃣ Optional brûlée topping
Right before serving, sprinkle a thin layer of sugar over the top and use a kitchen torch to caramelize until golden and crisp.
