Matcha Lemon Muffins

Ingredients
For the batter:
- 1 lemon (zest and juice)
- 170g sugar
- 100g butter (softened)
- 250g yogurt
- 2 eggs
- 280g flour
- 1/2 packet baking powder (8g)
- 1 pinch of salt
For the frosting:
- 200g cream cheese
- 100g powdered sugar
- 2 tsp Matcha Union Premium Matcha powder

Preheat and prepare:
Preheat your oven to 180°C (350°F). Line a muffin tin with liners to get ready for baking. -
Mix the wet ingredients:
In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the yogurt, lemon zest, and juice until combined. -
Incorporate the dry ingredients:
Gradually fold in the flour, baking powder, and a pinch of salt. Mix until just combined—don’t overmix to keep the muffins light and fluffy! -
Bake the muffins:
Divide the batter evenly among the muffin cups. Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool completely. -
Prepare the frosting:
While the muffins cool, beat the cream cheese, powdered sugar, and Matcha Union Premium Matcha powder in a bowl until smooth and creamy. -
Decorate and serve:
