Matcha Madeleines

Soft, buttery little clouds with a hint of matcha and a layer of creamy white chocolate. Perfect for a quiet afternoon coffee or tea moment — especially on a cozy baking day. 🤍


🧈 You’ll Need:

  • 140 g butter
  • A pinch of salt
  • 2 eggs
  • 100 g sugar
  • 20 g honey
  • 100 g flour
  • ½ tsp premium matcha powder @matchaunion
  • ½ tsp baking powder
  • 80 g white chocolate
  • 1 tsp extra matcha powder (for coating)

🍃 Method:

1️⃣ Melt the butter
Melt butter with a pinch of salt. Set aside to cool slightly.

2️⃣ Whisk the eggs
In a bowl, whisk together eggs, sugar, and honey until light and airy.

3️⃣ Combine dry ingredients
In another bowl, mix flour, baking powder, and matcha powder.

4️⃣ Mix it all together
Add the dry ingredients to the egg mixture, then pour in the melted butter. Stir until smooth.

5️⃣ Chill the batter
Refrigerate for 30 minutes to help get that classic madeleine rise.

6️⃣ Bake
Preheat oven to 200°C. Brush your madeleine mold with oil or butter. Fill each cavity ¾ full.
Bake at 200°C for 3 minutes, then reduce to 180°C and bake for another 8 minutes.

7️⃣ Cool & coat
Let the madeleines cool completely. Clean the mold for the next step.

8️⃣ Add the chocolate layer
Melt white chocolate with 1 tsp matcha powder. Spoon ~1 tsp of matcha chocolate into each mold cavity, then press a madeleine on top. Chill until set.

9️⃣ Unmold & enjoy
Once set, pop them out and enjoy your soft, matcha-dipped madeleine moment. 💚


☁️ Optional Extras:

  • Dust with powdered sugar
  • Add a pinch of vanilla or lemon zest to the batter
  • Serve with a matcha latte or earl grey for peak cozy
