Vanilla Chai Matcha Latte

This homemade vanilla chai extract transforms a simple matcha latte into the coziest little ritual — rich, gently spiced, and beautifully balanced.
🌿 You’ll Need:
For the Vanilla Chai Extract:
- 3 black tea bags
- 2 cinnamon sticks, broken
- 2–3 cloves
- 2 star anise
- 4 whole peppercorns
- 4 cardamom pods
- ¼ tsp nutmeg
- ½ cup coconut sugar
- 1½ cups water
- 2 tsp vanilla bean paste or extract
For the Latte:
- Homemade vanilla chai syrup
- Milk of choice
- Ice cubes (or warm milk for a hot version)
- 1 tsp vanilla matcha powder @matchaunion (whisked with 60 ml warm water)
✨ Method:
Make the Vanilla Chai Extract:
1️⃣ Simmer the spices
Add all ingredients except the vanilla to a small pot. Bring to a boil.
2️⃣ Infuse
Lower the heat and let it gently simmer for 7–10 minutes.
3️⃣ Cool & finish
Remove from heat and let cool slightly. Stir in the vanilla.
4️⃣ Strain & store
Strain into a clean glass jar. Store in the fridge for up to 2 weeks.
Make the Latte:
1️⃣ Add a generous splash of vanilla chai syrup to a glass with ice.
2️⃣ Pour over milk of choice.
3️⃣ Top with freshly whisked matcha.
4️⃣ Stir gently — or leave layered for that cozy café look.
