Matcha Marble Cake

🌿 You’ll Need:
- 120 g melted butter
- 180 g sugar
- 1 tsp vanilla sugar
- 3 eggs
- 300 g flour
- 1 pinch of salt
- 1.5 tsp baking powder
- 1.5 tsp cornstarch
- 100 g Greek yogurt
- 7 g premium matcha powder @matchaunion
- 40 ml milk (reserve 20 ml for the matcha batter)
✨ Method:
1️⃣ Preheat
Preheat your oven to 180°C (350°F). Grease or line a loaf pan.
2️⃣ Whisk the base
Whisk melted butter, sugar, vanilla sugar, and eggs until creamy and slightly airy.
3️⃣ Add dry ingredients
Mix in flour, salt, baking powder, and cornstarch briefly — don’t overmix.
4️⃣ Stir in yogurt & milk
Add Greek yogurt and milk. Mix until smooth.
5️⃣ Make the matcha batter
Transfer about ⅓ of the batter into a separate bowl. Stir in the matcha powder and the reserved 20 ml milk until evenly green.
6️⃣ Create the marble
Alternate spoonfuls of vanilla and matcha batter into the cake tin. Use a skewer or knife to gently swirl for that marble effect.
7️⃣ Bake
Bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.
8️⃣ Cool & slice
Let cool before slicing to reveal the beautiful green swirl.
